Salmon in a can – reincarnated

We have these matching cups at home – one says Reinvent and the other Reincarnate. Every time I look at a boring can of fish I am thinking there is no way to reinvent this thing, but if you include it in a good recipe you can very well call it reincarnation.

I am a fast cook – I have only so much time to dedicate to my lunch – it’s usually between skype sessions with clients and getting ready to go to the studio. I have to make meals fast, and they can’t be heavy, because let’s face it, rolling on the floor after a couple of cups of chili is no fun.

In this recipe I use a can of salmon to make 8 small salmon burgers – I enjoyed them on top of a greens salad, but you can also include them in a wrap, a festive plate of steamed veggies or eat as a snack between meals. They are high protein and fiber and extremely satisfying! Double or triple the amount for serving a large family.

Serves 2:

1 can of salmon (6 oz)

1 oz grated cheddar cheese

1 egg

1 1/2  tbsp ground flax

2 tbsp chopped parsley

dash lemon pepper

ghee/oil for cooking

Break the salmon up with a fork and then add all the ingredients. Stir well and set aside for several minuted to allow the mixture to stick well. Heat a nonstick pan with some ghee and form small patties. Cook on both sides till golden.

These are fantastic cold if you have the patience to wait. They pack easily for the office and make a really nice travel snack too! If you are doing The 30 Day Real Food Reset this recipe is reset compliant – yeah!
