Make this real food ice cream for Valentine’s Day

The signature Valentine Day’s food is chocolate – no doubt!  It melts in your mouth, sends thrills down your back, it makes you  say ”yes, honey” . Chocolate is made of happiness, bliss, everything nice…and I suspect, a part black magic.

I suggest you keep chocolate for those times when you have no time to make anything.  Trust me, in just 10 minutes you can have two incredible flavors of ice cream, made in the comfort of your own kitchen, 100% real food inspired, no skills needed. Armed with a blender, you will make a new dessert that screams: ” I love you, and I also love real food!”.

For the unusual flavor hunter – Cilantro-Lime Ice Cream

This recipe was  kindly given to me by my friend Christine, who made it sound like a pretty loose creative process…that left it wide open to my interpretation. I am sure it’s not the same recipe, but I hope I cam pretty close! Since it tastes amazing I suspect I did good!

To make 2 generous servings – 10-12 small pieces:

1/2 cup coconut oil

1/2 cup raw cashews

juice of 2 limes

2 tbsp honey

a small bunch of cilantro

1/4 cup water

Place all the ingredients in a blender and blend till absolutely smooth. I used the Vitamix and it worked beautifully. I am sure most blenders should be able to do the job.

Once you have your smoothie-like solution:

1. Try not to drink it, it’s delicious

2. Find small shapes to pour into

I used ice cubes (shaped like coffee beans), and some square cups. You can also spread the mixture at the bottom of a Tupperware container and then use cookie cutters or a sharp knife to cut the desired shapes once it’s frozen. Freeze for at least 2 hours and let the ice cream soften a bit before serving.

For the real food girl – Vanilla Strawberry Ice Cream

This is a more traditional and smooth flavor, and we ate it in no time! You can really taste the strawberries and vanilla! You just made Ben and Jerry cry.

5-6 large strawberries (fresh or frozen)

2 tbsp honey

3-4 drops vanilla extract

1/4 cup water

Once you have your smoothie like solution:

1. Try not to drink it, it’s delicious

Here are some other variations you can try: Mayer lemon and ginger, Orange and turmeric, Banana and vanilla, Apple and cinnamon…I am sure you can keep coming up with more and more on your own – after all cooking is about creating something new every time and making it your own!

    I can’t NOT have chocolate on V-day, but I don’t see why I can’t have BOTH chocolate AND these lovely ice creams. You rock!

    I actually, really just made both of these, but used plain coconut milk beverage instead of water. The cilantro lime is very creamy and flavorful (I also added 1 lime zest). Used raspberries from my yard instead of strawberries and had to add a few drops of raspberry stevia to perk up the flavor. Used my Vitamix and an ice cream machine. Quick and easy. My husband hates both of them, but he makes his own sugary sorbet (he is not paleo).
