A huge salad is one of my go to lunches during the week. I am lucky that I get to be home for lunch, but I still have very little time to prepare anything from scratch.
Canned tuna to the rescue. We recently reviewed the brand we love the most – you can read all about it on Meal Survivor. This salad features mixed baby greens, tuna, roasted pepper, and avocado – it’s a great mix of flavors and I dare say extremely filling!
Serves 1 or 2 less hungry people:
1 can tuna (5 or 6 oz)
1 large avocado
3 cups baby greens
1 bell pepper
2 tbsp parsley
salt, pepper, lemon, olive oil to taste
Mash the tuna and avocado together, season with salt, pepper and lemon. Let the mixture sit while you roast the pepper. You can do this over an open gas flame on your stove or using your grill. Once grilled the pepper will have charred exterior. You can choose to peel it or not. In a large bowl, place the greens and parsley, top with the tuna salad mix and decorate with slices of roasted pepper. Season with salt, lemon juice and olive oil and enjoy!
