Cozy Breakfast Latte

Cool weather has us craving the type of coziness only this warm breakfast latte can satisfy

It’s been a beautiful fall, and most of our autumn leaves have fallen and been raked, gathered, and used as mulch under our bushes and trees.

Even though fall just started, here in Colorado, we’ve already had a few days of snow and some pretty cold temperatures. At least for this California boy. 😜

If you don’t know, Galina and I have a  health membership full of like-minded friends and family.  Each month we create recipes, movement programs, and mindfulness practices based on a theme.

This month, like most months, we asked the members of our Eat Move Live 365 Community what they wanted.

  • With 2020 being what it is, everyone wanted easy, tasty, and comforting.
  • With fall leading to cold weather, everyone also wanted warm, cozy, and full of spices.
  • With us being who we are, we wanted healthy, quick, satisfying, and easy cleanup.

So, Galina created the Cozy Breakfast Latte

Galina has been enjoying warm, cozy drinks in the morning for some time now, and this is one of her favorites.

It’s not only comforting, but it also smells great and is a complete meal. It’s been a very popular recipe in the community, so I thought I’d invite you to try it!

Galina’s Cozy Breakfast Latte

Serves 2

2 cups oat milk or other milk of your choice

2 tbsp almond butter or other nut butter

1 cup roasted butternut squash or pumpkin puree from a can

1 scoop protein powder of your choice—we used vanilla, but plain will work, too

1 tsp cinnamon

½ tsp turmeric

A pinch of cardamom

A few dashes of pumpkin spice, optional

Directions

Heat up the milk and butternut squash in a pan.

Add milk, squash, protein, and spices to a blender (or use an immersion blender) and blend until smooth.

Pour into mugs or cute cups and dust with cinnamon, if desired.

That’s it. Simple, tasty, comforting, and 100% healthy and satisfying, especially on a cool fall morning.
